Pork stew with potatoes

Ingredients:
- 900g pork (loin)
- 120g onion
- 100g white wine
- 1 litre meat broth
- salt to taste
- 5 tablespoons olive oil
- 600g potatoes
Preparation:

1 Cut the meat into cubes of about 3-4cm on each side and 2 finely chop the onion. Then pour the oil into a large, hot pan over high heat. When the oil is very hot (about 170°C) 3 put the meat in the pan and seal the pieces well on all sides.

When the meat is well browned, add the white wine and wait until all the alcohol has evaporated. At this point 4 add the chopped onion and mix well. 5 Also add 1 ladle of broth so that the meat is only half immersed. Finally, lower the heat, 6 cover with the lid and let cook for 1 hour. If necessary, add a little broth during cooking.

Advise
- As a cut of meat you can also use pork shoulder or pork neck depending on your preference.
- If possible, avoid white-fleshed potatoes, which are very good for making gnocchi but would fall apart too easily in this type of dish.
- Don't worry about being precise when cutting the potatoes, even if there are smaller pieces, they will fall apart during cooking and give more creaminess to the stew.
